游水黃花魚

區區年逾古稀幾十年來從來沒有見過游水黃花魚，最近一周之內，不但開了眼界看過游水的鮮活黃花魚，而且，還有口福吃到鮮活黃花魚煲飯。

說老實的，個人對黃花魚評價並不甚高，相信同代人都有同感。

上世紀七十年代之前黃花魚是平常之物，當大造之時價格甚廉，粵菜業界把外省菜館之黃魚上桌奉客引為笑柄，因為這種粗魚就是作員工伙食多吃兩餐也招不滿，怎會料得到時至今日竟然會變得如此矜貴。

黃花魚的優點在肉豐而無細刺，但卻有魚味薄的缺憾，故須以濃味相配以補其不足，例如糖醋黃魚、紅燒黃魚、雪菜黃魚之類。

潮州菜「普寧豆醬蘿蔔煮金龍」是個人最欣賞的黃魚食制。潮州話稱黃花魚為金龍，黃花魚借了豆醬的濃郁鹹鮮味和蘿蔔鮮甜頓然滋味豐美起來了。

以幾両重的小黃花魚作凍吃的「金龍魚飯」，本來平淡的魚味一蘸普寧豆醬也便脫胎換骨鮮美起來。黃花魚煲飯滋味不錯，可惜未備普寧豆醬作佐料。

區區以作客之身不便問價，不知這條游水黃花要破費多少銀両了。
